White Dog was brewed and fermented with specific techniques to accentuate spicy clove flavors and aromas.
The pilsner and wheat malts from Admiral Maltings in Alameda CA create a pleasant fresh-baked bread background. We also added a touch of cherry wood smoked malt from Briess Malt in Chilton WI for texture. Sonnet hops sourced from Elk Mountain Farms in Bonners Ferry ID add a subtle floral and citrus note.
We also co-pitched Brett Brux along with Wit Yeast, which created a wonderful pear/pineapple aroma.
