This beer was inspired by the ancient brews from Ukraine, where pieces of bread were soaked and fermented to create a tasty beverage. We blended in dozens of sourdough bread loaves from our friends at IZOLA Bakery here in the East Village. We also used the wild yeast from their sourdough starter for secondary fermentation. The result is a truly unique beer with notes of bread crust, caramel, dried cherries and fig.
